Suanzaixiaomian (Mixed Bean Noodles)

Notes

Ingredients:
  • 100g Peas
  • Homemade fried sauce, to taste
  • 3 Green onions
  • Sesame paste, to taste
  • Salt, chicken essence, Sichuan pepper powder, to taste
  • Tailai chicken sauce, to taste
  • 5 cloves of Garlic
  • Spicy noodles, to taste
Instructions:
  1. Soak the peas overnight. Cook with ginger slices, coarse salt, and equal parts water in a pressure cooker for 15 minutes. Optionally, simmer on the stove for a richer flavor.
  2. Mince garlic and mix with a bit of water. Chop green onions and pickled mustard tuber. Optionally, chop cilantro.
  3. Adjust the seasoning with spicy noodles, green onions, salt, chicken essence, Sichuan pepper powder, and sugar for enhanced flavor. Heat oil and pour over to release the aroma.
  4. Add garlic water, chopped pickled mustard tuber, a spoon of soy sauce, sesame paste, and chicken sauce with three spoons of water. Mix well.
  5. Boil the noodles until cooked, cool them under running water, and then mix with the prepared sauce. Add cooked peas and fried sauce, mix well, and serve.
