How to Make the Perfect Slow Cooker Curry?

Using a slow cooker can transform a variety of meat cuts into tender and flavorful meals within hours without the need for additional effort. The advantage? It requires only a fraction of the power of a conventional oven. Start by whisking the chicken broth, soy sauce, brown sugar, curry powder, salt, pepper, garlic, and ginger together in the crockpot. If you’re aiming for richer flavors, marinate the chicken with spices and yogurt, and keep it refrigerated for up to 12 hours.

When ready, heat butter and oil in a large pan. Add the onion and chicken, cooking until the onions soften and the chicken is sealed, which usually takes about 5-6 minutes. Next, put the diced chicken thighs, sweet potatoes, and spring onions into your slow cooker pot. Add freshly ground spices, Madras Powder or Paste, Tamarind paste, tomato puree, salt, and pepper. Cook this mixture for 2 minutes before transferring to your slow cooker.

Opting for an oven-proof pot provides versatility for your culinary endeavors. It’s convenient for cleaning, being dishwasher safe, and is made from oven-safe stoneware, perfect for achieving a golden crust on cheesy dishes. For the curry, pour in the boiled mixture, stir, and cover with the slow cooker lid. Cook for 5-6 hours on high or 7-8 hours on low. Once done, gently shred the tender chicken with two forks and mix in the Garam Masala.

For vegetarians, there are numerous options to explore. Indulge in a creamy vegetarian korma, cheesy lasagne, or a vegetable-packed stew with top vegetarian slow cooker recipes. A Thai-style creamy curry can be achieved by combining coconut milk, basil, salt, pepper, yellow curry, chili powder, red onion, garlic, and jalapeño in the crockpot. After a few hours, the flavors will meld beautifully.

Lastly, when making curry, always remember to check it during the last hour of cooking, stirring the ingredients if they begin to stick to the sides.

For those who fancy lamb, heat oil in a large pan (or use the slow cooker pot if it’s hob-friendly). Sear the lamb until it’s lightly browned on all sides, which takes about 6-8 minutes. And for an added touch, in a separate pan, heat a tablespoon of oil and sauté onions, garlic, and ginger until the onions turn a soft and light golden brown.

After enjoying your Crock Pot Chicken Curry, let it cool to room temperature before transferring it to an airtight container for refrigeration. Looking for quality slow cookers? Check out these slow cookers (ad) on Amazon.
