Baumkuchen is a traditional German cake. The appearance of the cake resembles a tree’s growth rings. It is labour intensive cake if you make it in the traditional way, but I am going to show you how to make this beautiful cake at home the easy way! It just looks like the Baumkuchen you see and can buy from shops in Japan.
This page has shown how anyone can make traditional German Baumkuchen at home. Yes, it’s complicated. Yes, it takes several hours applying layer after layer of batter to build up to a respectable diameter. But consider, this is a cake that heretofore has been proclaimed by countless experts as being impossible for the home baker to make.
Whip butter and sugar well until creamy. Gradually add egg yolks and the rum, zest, salt, almonds, flour and cornstarch to the butter-sugar mixture until a light, foamy batter forms. Beat egg whites until very stiff and fold gently into the batter. Pour about 2 tablespoons batter (a thin covering) into a 8-1/2″ springform pan greased with butter.
While whisking, add the butter, salt, and vanilla paste. In a different bowl, whisk the egg whites with the sugar until stiff but don’t make them too stiff. Add some of the egg whites to the mix with the egg yolks, also some of the flour and starch, and carefuly mix with a large spoon.
