In the Netherlands, chipolata is the name of a gelatine-set dessert flavored with Maraschino liqueur and studded with raisins, glacé or fresh fruits, and nuts. This version uses fresh fruits, which we prefer, and has a thick, foamy finish. The recipe is from De Banketbakker cookbook, republished with the permission of the publisher.
I’ve used Chipolata sausages but you can use any of your favourite sausages. You’ll also need onions, garlic cloves, chilli powder, tomatoes, tomato puree, butter beans (or any of your favourite beans), chicken stock, Worcester sauce, dark muscovado sugar, dried mixed herbs and Red Wine, and salt to taste.
Chipolata is a small mild English sausage (there are also French and Italian chipolatas) made with pork and rusk. Soak rusk in water. Grind lean meat with 3/16” (5 mm) plate. Grind fat with 1/4” (6 mm) plate.
