This coconut loaf cake is buttery and full of coconut flavor! It’s easy to make and has a 3 ingredient homemade coconut glaze poured over the top. The perfect recipe for brunch and Easter!
Ingredients 1 175 g or ¾ cup softened butter 2 175 ml or ¾ cup coconut milk 3 290 g or 1 ½ cups regular sugar 4 3 eggs (lightly beaten) 5 225 g or 1 ¾ cups Plain / All purpose flour (sieved) 6 1 ½ Teaspoons baking powder 7 ½ Teaspoon salt 8 6 Tablespoons desiccated / shredded coconut
Mix flour, baking powder, and salt in a separate bowl; add to butter mixture alternately with milk, mixing until batter is just incorporated. Fold in coconut, mixing just enough to evenly combine. Pour the batter into prepared loaf pan.
