Ma Lai Go Chinese Steamed Cake is a fluffy brown sugar sponge cake typically found on dim sum carts in Southern China and Hong Kong—the few places where you’ll find it done right, and where it’s quite popular. What is Ma Lai Go?
This cake is made using the separated eggs method. The cake has a delicate texture, a soft and fluffy taste, and the aroma of eggs and butter. The good thing of steamed cake is not getting heatiness when you eat more! Add enough water to the steamer and turn on the heat to preheat the steamer.
It’s a sponge cake made with a few of the usual ingredients, namely eggs, plain flour, and a leavening agent like baking powder or baking soda. But more than that, there’s also brown sugar, honey, custard powder and evaporated milk. And instead of being baked, it is steamed. In fact, it is served and eaten when it’s steaming hot.
Scrape the bottom of the bowl and add 1½ teaspoons vanilla extract, ⅓ cup evaporated milk, and 1½ tablespoons custard powder. Beat for 1 minute. Sift 1 cup cake flour, ⅛ teaspoon salt, and 3½ teaspoons baking powder.
