Classic Vanilla Cake. The name says it all: This is the one to serve at birthdays and other celebrations that call for the perfect version of a traditional American layer cake. The oil in the batter keeps the cake moist, and the simple American buttercream is sweet and fluffy.
Drummond bakes the sheet cake at 350 levels for 20 minutes. For the vanilla bean frosting, Drummond provides two sticks of butter, powdered sugar, milk, and vanilla bean to a bowl. “It’s basically the caviar from one vanilla bean,” says Drummond. Utilizing an electrical mixer on a low setting, Drummond mixes the elements for about 30 seconds.
Sift together flour and salt. Set aside. Mix eggs, buttermilk, vanilla, baking soda, and vinegar in a separate bowl. Alternate adding flour mixture and buttermilk mixture to the shortening mixture, mixing after each addition.
Note: With the exception of the increased quantity of vanilla extract, this is the same basic recipe as the Red Velvet Cake recipe that’s both in my cookbook and here on the site. Just stop short of adding the red food coloring mixture and you’ve got this recipe.
