Pork Backbone and Lotus Root Soup

Notes

Ingredients:
  • 1 Pork Backbone
  • 1 Lotus Root
  • Appropriate amount of Ginger
  • Appropriate amount of Salt
  • A bit of Cooking Wine
  • Appropriate amount of Green Onions
  • Appropriate amount of MSG
  • 4 sprigs of Coriander
  • Appropriate amount of Camellia Oil
Instructions:
  1. Clean the pork backbone.
  2. Drain the water thoroughly.
  3. Place the pork backbone in cold water and add cooking wine.
  4. Add ginger slices and coriander, then bring to a boil.
  5. Boil for 2 minutes.
  6. Transfer to a sink and wash under warm water.
  7. Drain the water again.
  8. Heat oil in a pot and add ginger slices.
  9. Fry until fragrant.
  10. Add the pork backbone and stir-fry evenly.
  11. Transfer to a high-pressure cooker, cover, and stew for 30 minutes.
  12. Peel and chop the lotus root.
  13. Add the lotus root to the pork backbone, season with salt, and stew for 5 more minutes.
  14. Add MSG and stir well.
  15. Finish by sprinkling with green onions before serving.
