Garlic Chives Stir-Fried with Scallops

Notes

Ingredients:
  • Garlic chives (韭黄), 150g
  • Scallop meat, 200g
  • '太太乐' Fresh Chicken Juice (鲜鸡汁), 10g
  • '太太乐' Cooking Wine, 20g
  • Soy sauce, 10g
  • Minced ginger, 5g
  • 1-2 小米辣 (a type of small hot chili pepper)
  • Green onion segments, 5g
Instructions:
  1. Prepare '太太乐' Fresh Chicken Juice, '太太乐' Cooking Wine, scallops, and garlic chives.
  2. Boil water in a pot, add scallop meat and 10g of '太太乐' Cooking Wine. Once boiled, remove the scallops.
  3. Cut the garlic chives into sections, slice the 小米辣 into rings, mince the ginger, and cut the green onion into segments.
  4. Heat oil in a pan and sauté the green onion, ginger, and 小米辣 until fragrant.
  5. Add the scallops and stir-fry evenly.
  6. Add 10g of '太太乐' Cooking Wine to remove any fishy taste, stirring evenly.
  7. Stir in the garlic chives.
  8. Add 10g of '太太乐' Fresh Chicken Juice and 10g of soy sauce, adjusting with a bit of salt to taste.
  9. Stir-fry everything evenly and then it's ready to serve.
