Drunken Spiced Razor Clams

Notes

Ingredients:
  • Razor Clams (毛蚶) - 700g
  • Selected Drunken Marinade Sauce (珍选醉卤捞汁) - 70ml
  • Oyster Sauce (蚝油) - 1/4 Spoon
  • White Vinegar (白醋) - 35ml
  • Mustard Oil (芥末油) - 5ml
  • Green Onion (香葱) - 1
  • Cilantro (香菜) - 1
  • Homemade Chili Oil (自制辣椒油) - 2 Spoons
Instructions:
  1. Soak the razor clams in salt water for over 30 minutes.
  2. Rinse and soak in clean water to remove sand.
  3. Boil in water with green onion leaves.
  4. Turn off the heat once the clams open.
  5. Remove and let cool.
  6. Extract the meat from the clams and mix with chopped green onions.
  7. Add the selected drunken marinade sauce.
  8. Mix well and wrap with cling film; chill in the fridge for 20 minutes.
  9. Take out from the fridge and add oyster sauce; mix well.
  10. Add white vinegar to balance the sweetness of the sauce.
  11. Mix in mustard oil for added flavor.
  12. Add homemade chili oil.
  13. Mix in chopped cilantro.
  14. Mix well and taste – it should be superb.
  15. Plate and serve. The drunken spiced razor clams are ready.
