Some Jamaicans call them Coconut Rock Buns, others call them Rock Cakes. Sometimes they’re crunchy, as the name implies, but I like them soft but dense like an English Scone. My recipe gives you the best of both worlds.
Rock Cakes/Buns Directions Combine flour, Grace Coconut Milk Powder, baking powder and nutmeg and mix for even distribution. Add Grace Prima Margarine and use a dough blender or your finger tips to gently rub the margarine into dry mixture until it resembles fine breadcrumbs. Mix in the dark sugar and soaked raisins using a wooden spoon.
Sprinkle with demerara sugar, if using. Bake in the preheated oven for 15 minutes or until golden brown and well risen. The rock cakes should be firm to the touch. Enjoy! Dried cranberries make a good addition, as do a few chopped nuts, a teaspoon of honey, or some chocolate chips.
