Drunken Prawns in Special Brine

Notes

Ingredients:
  • Prawns, 300g
  • Spring onions, 3 stalks
  • Ginger slices, 4 pieces
  • Premium Drunken Brine Sauce, 5 tablespoons
Instructions:
  1. Clean the prawns, removing the heads and feet.
  2. Boil water and add spring onions, ginger, Sichuan peppercorns, prawns, and cooking wine. Cook until done, removing the prawns a few minutes later than smaller ones.
  3. Rinse the cooked prawns in cold water, optionally adding ice cubes to improve the texture.
  4. Marinate the prawns in the premium drunken brine sauce overnight.
  5. Before serving, garnish with coriander for decoration.
