Egg Stir-Fried Vermicelli

Notes

Ingredients:
  • 3 eggs
  • Handmade fine vermicelli, as needed
  • Zhen Xian Mapo Tofu seasoning, as needed
  • Green onions, ginger, garlic, to taste
  • Small amount of chili pepper
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • A handful of chives
  • 1 tablespoon sesame oil
Instructions:
  1. Heat oil in a pan, pour in the eggs and scramble until just set. Remove and set aside.
  2. In a separate pan, sauté green onions, garlic, and chili pepper.
  3. Add a small packet of Zhen Xian Mapo Tofu seasoning and fry until the oil turns red.
  4. Add enough water, light soy sauce, and dark soy sauce for coloring.
  5. Add the handmade fine vermicelli.
  6. Cook for two minutes, then add the chives and scrambled eggs.
  7. Stir-fry until well mixed and drizzle with a little sesame oil before serving.
